Zingy Corn Casserole: Add 1-2 cans of green chilies and 2 tablespoons of diced cowboy candy to the corn mixture and fully combine. Follow the rest of the recipe as written. When ready for the cheese topping, add your own cheese blend of pepper jack and Monterey jack in your preferred portions.
Loaded Corn Casserole: Add a 1/4 cup of chopped green onions and a 1/2 brick of softened cream cheese to the corn mixture and fully combine. Follow the rest of the recipe as written.
