Bok choy, or pak choi is a popular vegetable used throughout Chinese recipes, and it’s easy to see why. The vegetable is delicious and packed with vitamin C. It can be enjoyed as soup or bok choy stir-fry. You might even see sautéed bok choy on the table along with other Chinese vegetables during a multi-course meal.
When it comes to bok choy, you can eat the whole thing, green leafy part, white stem, and all. Perfectly cooked it will be crisp yet tender. If it’s not quite cooked enough, the texture will be a bit like celery. Overcooked and it’ll get mushy. When done just right, it’s simply delicious.
Today’s recipe comes from the Tasting Table, an online publication staffed by cookbook writers, chefs, graduates of New York’s Institute of Culinary Education, and home cooks around the country who all work together to come up with delectable recipes from every cuisine. Healthy: Leafy greens are some of our favorite vegetables and many are packed with vitamin C. Bok choy, a type of Chinese cabbage, is no different. Stir-frying is a great way to get in some healthy vitamins and practically any type of vegetable can be prepared this way. Napa cabbage, another member of the cabbage family, and bok choy are foundation veggies for many healthy Asian dishes.

Ingredients Needed to Make Bok Choy Stir Fry
- Bok Choy: You can get tender bok choy at most grocery stores. If you have an Asian market nearby, they’ll have it, as well. The leaves should be dark green, and the stocks white or light green. Choose heads that are firm and fresh. Baby bok choy and the larger variety will both work.
- Garlic Cloves: Two cloves are all you’ll need for this recipe. You can also use already-minced garlic to make the process faster.
- Fresh Ginger: Fresh ginger adds a delightfully fresh flavor to this dish. You’ll need a 1-inch piece.
- Sesame Oil: Sesame oil is made out of toasted sesame seeds and tastes fantastic. It’s a flavor enhancer that boosts the umami of any Asian dish.
- Oyster Sauce: Oyster sauce is a savory sauce that is used in a lot of Asian food. If you don’t have any on hand, you can use hoisin sauce, instead.
- Vegetable Oil: You’ll need just a bit of oil for this stir fry. You want an oil that handles high temperatures like peanut oil or grapeseed oil. You do not want olive oil because it can smoke if it gets too hot and the flavor doesn’t pair well with this dish.
- Sesame Seeds: You want white sesame seeds for garnish. This is optional but adds a pop of interest when presenting your dish.
Equipment Needed In the Kitchen
- Large Wok: A wok is the best tool to use for stir-frying. However, a large skillet or a large frying pan will work in a pinch.
- Tongs: Tongs will be invaluable as you cook the bok choy and when you plate up this beautiful side dish.
- Serving Plate: You’ll need a large serving plate or platter to place all the stir-fried bok choy on for serving. The bok choy doesn’t shrink in size, so you can choose the right size plate after you trim up the vegetable.
